Lancewood Crumbed Mozzarella Sticks

Ingredients

Crumbed mozzarella sticks:

300 g LANCEWOOD® Medium Fat Mozzarella , cut into 14 sticks (± 1.5 cm X 1.5 cm x 8 cm long)
125 ml cake flour  seasoned with salt & pepper to taste
2 large egg(s) , lightly beaten
375 ml breadcrumbs
oil  for frying

Plum dipping sauce:

80 ml plum jam  or mixed fruit jam
15 ml lime juice
15 ml soy sauce
1 ml crushed garlic
1 ml fresh ginger , grated

To serve:

fresh coriander , chopped

Method

Crumbed mozzarella sticks:
Dip the mozzarella sticks into the flour, then into the beaten egg and then into the breadcrumbs.

Place it on a plate and refrigerate for 30 minutes.

Heat the oil (about 3 cm deep). Fry each mozzarella stick briefly in hot oil until golden. Remove with a slotted spoon and drain on wax paper to absorb excess oil.

Plum dipping sauce:
Using a small serving bowl, mix the jam, lime juice, soy sauce, garlic and ginger together.

Serve the crumbed mozzarella sticks with plum dipping sauce and fresh coriander.
