Ingredients


Flapjacks:
3 extra large eggs
1 x 250 g LANCEWOOD® Full Fat Smooth Cottage Cheese
60 ml milk
250 ml cake flour
45 ml castor sugar
5 ml baking powder
A pinch of salt
Oil for frying

Chocolate spread: 
1 x 230 g LANCEWOOD® Medium Fat Cream Cheese, at room temperature 
80 ml icing sugar 
30 ml cocoa powder

Method


Flapjacks:
Beat the eggs, cottage cheese and milk together until smooth. Sift the flour, sugar, baking powder and salt together and add to the egg mixture, a little at a time, beating well after each addition. Heat a little oil in a pan and spoon heaped tablespoons of the mixture into the pan. Fry until golden on the one side, then flip over and fry until golden on the other side and cooked through.

Chocolate spread: 
Beat cream cheese, icing sugar and cocoa powder together until smooth. Spread onto flapjacks and top with fresh berries of your choice.

Alternatively try the following instead of chocolate spread:
