Ingredients


1 x tub LANCEWOOD® Medium Fat Plain Cream cheese, room temperature
45 ml cocoa powder
200 g shortbread or coconut biscuits, coarsely crushed
180 ml fruit mince meat
50 g almonds, chopped or diced or any other nuts of your choice
A pinch of mixed allspice
2 x 80 g dark chocolate slabs, melted & cooled
Icing sugar

Method


Combine the cream cheese, cocoa powder, crushed biscuits, fruit mince meat, nuts and mixed allspice in a bowl and mix well. Add the melted chocolate and mix in. Divide the mixture into 3. Spoon each third onto a piece of cling film and shape into a 3 cm in diameter x 20 cm long sausage. Wrap in cling film. Refrigerate until firm. Roll in icing sugar. Cut into slices and serve with coffee.

HINTS & TIPS:

  • Wrap in baking paper and tie a ribbon around it. The perfect little gift.
  • Add mixed citrus peel instead or chopped dried fruit like cranberries, apricots or glacé cherries.
  • Add a tablespoon of brandy for a bit of kick.
