30 ml olive oil
10 ml garlic, crushed
1 onion, diced
Salt & freshly ground black pepper to taste
500 g zucchini, sliced
400 g tomato pureé
30 ml basil, chopped – extra sprigs for garnishing
190 g LANCEWOOD® White Gouda, grated
190 g LANCEWOOD® Mozzarella, grated
Preheat the oven to 180°C. Pour the oil in a skillet and add the garlic, onion, seasoning and zucchini. Fry over a high heat for 10 minutes. Add the tomato purée and basil. Top with the two cheeses and bake in the skillet for 15 minutes, or until the cheese is melted and golden brown. Garnish with basil and enjoy warm.
