150 g LANCEWOOD® Mozzarella, finely grated
50 g sundried tomatoes, chopped
10 g basil, chopped
Salt & freshly ground black pepper to taste
4 chicken breasts
400 g streaky bacon
Preheat the oven to 180°C. Using a mixing bowl, add the Mozzarella, sundried tomatoes, basil and seasoning and mix through.
Slice a slit in each chicken breast lengthways to create a pocket. Spoon in the filling mixture and wrap each chicken breast in bacon.
Place chicken breasts in a prepared baking tray and bake for 40 – 50 minutes or until golden brown and cooked through.
