500 ml cake flour
10 ml baking powder
2.5 ml salt
2 extra large eggs
250 ml milk
225 ml water
10 ml lemon juice or vinegar
75 ml oil
Oil for frying
LANCEWOOD® Cheddar, Gouda or White Cheddar, grated
12 rashers rindless streaky bacon, fried
Sift the flour, baking powder and salt together. Beat the eggs, milk, water and lemon juice together. Add to the dry ingredients. Add the oil and mix until silky smooth. Leave to stand for 5 – 10 minutes. Use a non-stick or slightly oiled pan and fry until golden on the one side. Flip over and fry until golden on the other side and cooked through. Keep warm on a plate on top of a saucepan with boiling water. Cover with saucepan lid.
Sprinkle with cheese and top with bacon before rolling up.
