Healthier Chicken Nachos

Ingredients:

Chicken:
30 ml oil
1 onion, chopped
1 red pepper, chopped
2 garlic clove(s), crushed
500 g chicken breast(s), sliced
5 ml cumin
2.5 ml paprika
2.5 ml dried origanum
250 ml chicken stock
45 ml tomato paste, juice of half a lemon
30 ml fresh coriander, chopped

To assemble:
85 g Trigz Crunchy Popped Chips – Sweet chilli or Jalapeño flavour
250 g LANCEWOOD® Full Cream Plain Chunky Cottage Cheese
500 ml LANCEWOOD® Medium Fat Mozzarella, grated
1 small red onion, chopped
2 tomatoes, chopped
1 ripe avocados, diced & mixed with a little lemon juice
2 Jalapeno chillies, chopped
60 ml fresh coriander, chopped

Method

Chicken:
  1. Heat the oil and fry the onion and pepper until soft. Add the chicken and fry until golden. Add the garlic, cumin, paprika and origanum.
  2. Mix the stock and tomato paste together and add to the chicken.
  3. Simmer over low heat until most of the liquid has evaporated. Add lemon juice and seasoning to taste.


To assemble:
  1. Preheat oven to 180°C.
  2. Place half the chips on a platter. Spoon half the cottage cheese on top, followed by half of the cheese.
  3. Spoon half of the chicken on top. Repeat the layers.
  4. Bake for 20 – 25 minutes until golden.
  5. Serve with chopped red onion and tomatoes, avocado, chillies and coriander.
