Healthier Chicken Nachos

Ingredients:

Chicken: 30ml oil 1onion chopped 1red pepper chopped 2garlic clove(s) crushed 500g chicken breast(s) sliced 5ml cumin 2.5ml paprika 2.5ml dried origanum 250ml chicken stock 45ml tomato paste juice of half a lemon 30ml fresh coriander chopped

To assemble: 85g Trigz Crunchy Popped Chips  – Sweet chilli or Jalapeño flavour 250g LANCEWOOD® Full Cream Plain Chunky Cottage Cheese 500ml LANCEWOOD® Medium Fat Mozzarella grated 1small red onion chopped 2tomatoes chopped 1ripe avocados diced & mixed with a little lemon juice 2Jalapeno chillies chopped 60ml fresh coriander chopped

Method

Chicken:
  1. Heat the oil and fry the onion and pepper until soft. Add the chicken and fry until golden. Add the garlic, cumin, paprika and origanum.
  2. Mix the stock and tomato paste together and add to the chicken.
  3. Simmer over low heat until most of the liquid has evaporated. Add lemon juice and seasoning to taste.


To assemble:
  1. Preheat oven to 180°C.
  2. Place half the chips on a platter. Spoon half the cottage cheese on top, followed by half of the cheese.
  3. Spoon half of the chicken on top. Repeat the layers.
  4. Bake for 20 – 25 minutes until golden.
  5. Serve with chopped red onion and tomatoes, avocado, chillies and coriander.
