Heat the oil and fry the onion and pepper until soft. Add the chicken and fry until golden. Add the garlic, cumin, paprika and origanum.
Mix the stock and tomato paste together and add to the chicken.
Simmer over low heat until most of the liquid has evaporated. Add lemon juice and seasoning to taste.
To assemble:
Preheat oven to 180°C.
Place half the chips on a platter. Spoon half the cottage cheese on top, followed by half of the cheese.
Spoon half of the chicken on top. Repeat the layers.
Bake for 20 – 25 minutes until golden.
Serve with chopped red onion and tomatoes, avocado, chillies and coriander.
