Greek Salad Pinwheel Wraps

Ingredients

half a cucumber , sliced
1 yellow pepper(s) , cut into strips
250 g cherry tomato(es) , halved
half a red onion , thinly sliced
10 calamata olives , halved & pips removed
30 ml capers  (optional)
15 ml fresh dill , chopped
15 ml fresh mint , chopped
30 ml olive oil
15 ml lemon juice
5 ml dried origanum
salt & freshly ground black pepper
cos lettuce , shredded
250 g LANCEWOOD® Low Fat Chunky Chives Cottage Cheese
2 large wraps

 

Optional additions:

Boiled eggs, canned tuna, smoked chicken

Method

In a bowl, mix together the cucumber, yellow pepper, onion, tomato, olives, capers, dill and mint.

Then add the olive oil, lemon juice and dried oregano together and toss. Season with salt and pepper. Add any of the optional additions.

Arrange the lettuce on each wrap. Top with Cottage Cheese and the Greek Salad. 

Roll up tightly to enclose the filling and cut into 2 cm pinwheels.

Enjoy as a high protein lunchbox snack!
