Lancewood Easy Wors Casserole

Ingredients

500 ml penne pasta , cooked according to the instructions on the packet
15 ml oil
500 g boerewors , cut into 3 cm pieces
1 garlic clove(s) , crushed
1 red pepper  or yellow pepper, chopped into big cubes 
250 g mushrooms , sliced
10 ml mixed herbs
25 ml sugar
410 g canned tomato & onion mix
45 ml tomato paste
250 ml beef stock
salt & freshly ground black pepper  to taste
375 ml LANCEWOOD® Cheddar , grated

Method

Preheat the oven to 180°C and spray an ovenproof dish with non-stick spray.

Using a frying pan, heat the oil and fry the boerewors until golden on all sides. Remove and set aside.

In the same pan, fry the garlic, pepper and mushrooms until golden.

Add the mixed herbs, sugar, tomato and onion mix and tomato paste and mix through. Stir in the beef stock.

Add the cooked penne pasta and mix through until well combined. Season to taste and spoon into the ovenproof dish.

Sprinkle the cheese on top and bake for 15 – 20 minutes until golden and bubbling.

Serve with salad and garlic bread.
