Easy Fruit Mince Pies

Ingredients:

1 sheet(s) puff pastry
120 g LANCEWOOD® Mascarpone
450 g fruit mince meat
1 orange(s)
10 ml zest only
5 ml vanilla essence
1 egg(s), beaten
icing sugar for dusting

Method

  1. Preheat the oven to 180°C and grease a muffin pan.
  2. Place the sheet of puff pastry onto a floured surface and cut out 12 x 8 cm rounds.
  3. Place a pastry round in each greased muffin pan cup. Spoon about 10 g of mascarpone on top of each pastry round.
  4. In a mixing bowl, add the fruit mince meat, orange zest and vanilla essence and mix until well combined. Spoon the fruit mince meat mixture into the pastry shells.
  5. Cut out 12 x 5 cm star shapes from the remaining puff pastry and place a pastry star on top of each mince pie. Brush with egg.
  6. Bake for 12 – 15 minutes or until golden brown.
  7. Dust with icing sugar before serving.
