Create NowAdd the eggs and milk to a mixing bowl and whisk together.
Add the salt, black pepper and paprika and mix through.
Melt the butter in a frying pan over low heat. Add the omelette mixture and allow to cook for 2 minutes.
Sprinkle red pepper, chives and spinach all over the omelette and finish with cheese.
Once the cheese has melted, remove the omelette from the pan and add it to a serving plate.
Dollop 6 teaspoon portions of Cottage Cheese on half of the omelette and gently fold over.
Garnish with chives and red peppers.
Enjoy as a delicious breakfast or light lunch.
