Coronation Chicken

Ingredients

375 g LANCEWOOD® Double Cream Plain Yoghurt
60 ml creamy mayonnaise
60 ml chutney
15 ml lemon juice
5 ml mild curry powder
1 ml cinnamon
60 ml soft apricot(s) , chopped
60 ml sultanas
3 celery stalk(s) , thinly sliced
500 g chicken breast(s) , cooked & diced 
salt & freshly ground black pepper  to taste
30 ml almond flakes , toasted
fresh coriander  for serving

Method

Mix the yoghurt, mayonnaise, chutney, lemon juice, curry powder and cinnamon together and leave to stand for 30 minutes.

Add the apricots, sultanas, celery and chicken. Mix well.

Season to taste.

Serve on a bed of lettuce and sprinkle with toasted almonds and coriander. Alternatively use as a filling for a wrap.
