Chilli & Lime Sweet Potatoes

Ingredients

2 large sweet potatoes , washed, peeled & cubed
salt  to taste
60 ml butter
60 ml honey
juice of 1 lime
1 red chilli , chopped 
2.5 ml paprika
175 g LANCEWOOD Chilli & Lime DIPde'lite®
1 spring onion(s) , finely chopped
30 ml freshly chopped coriander

Method

Place the sweet potatoes in a pot with water. Season with salt, close the lid and cook until just soft.

Drain off excess water and return to heat. Add the butter, honey, lime juice, chilli and paprika.

Stir over medium heat until glazed and golden. Remove from the heat.

Spread the dip onto a platter. Spoon the sweet potatoes on top and sprinkle with spring onions, coriander and extra chopped chillies.
