Garnish:
1. Place a frying pan over medium heat and heat the oil.
2. Add the onion and garlic and fry for 5 – 7 minutes.
3. Add the mince, jalapeño and salt and cook for 10 – 15 minutes.
4. Once the meat has browned, add the tomato purée and dip and cook for a further 5 minutes.
5. Meanwhile, preheat the oven to 200°C.
6. Add the cooked penne pasta to a baking dish. Top with the beef mixture and combine well.
7. Top with cheddar and bake for 10 – 15 minutes or until the cheese has melted.
8. Garnish with coriander and jalapeños and enjoy!
