Cheese & Broccoli Savoury Muffins

Ingredients

250 g LANCEWOOD® Medium Fat Smooth Cheese and Chives Cottage Cheese
2 large eggs
250 ml broccoli florets , finely chopped
250 ml LANCEWOOD® Cheddar , finely grated
250 ml whole wheat flour
5 ml baking powder
2.5 ml paprika
1 ml salt

Method

Preheat the oven to 180o. Line a muffin pan with muffin liners and spray lightly with non-stick spray.

In a bowl, beat the cottage cheese and eggs together. Add the broccoli and 2/3 of the cheese. 

In a separate bowl, mix the flour, baking powder, paprika and salt together. Add to the cottage cheese mixture and mix until just combined.

Spoon the mixture into the prepared muffin liners and top with the remaining cheese. 

Bake for 15 - 20 minutes or until golden and a skewer inserted comes out clean. Transfer to a cooling rack and leave to cool.

HINTS & TIPS:
Use corn or grated baby marrows instead of broccoli.
