Lancewood Cheddar, Rare Roast Beef, Marinated Tomato And Rocket Sandwich With Mustard Cream

Ingredients

250 g cherry tomato(es)
1 clove garlic , crushed
1 small red onion(s) , thinly sliced
30 ml olive oil
15 ml balsamic vinegar
15 ml parsley , chopped
15 ml basil , shredded
salt & freshly ground black pepper  to taste
250 g LANCEWOOD® Medium Fat Plain Cream Cheese
30 ml Dijon mustard
8 slices bread  - freshly baked bread of your choice
200 g LANCEWOOD® Cheddar , coarsely grated
250 g roast beef , rare (approximately 8 slices)
rocket leaves , fresh

Method

Cut the cherry tomatoes in half. Add the garlic, sliced onion, olive oil, balsamic, herbs and seasoning to taste. Leave to stand for 1 hour, stirring every now and again. Mix together the cream cheese and the mustard. Spread cream cheese mixture thickly on all the slices of bread. Top 4 slices with the marinated tomatoes, cheese, rare roast beef and rocket, then top each with the remaining slices of bread.
