Aubergine slices:
Add the olive oil, lemon juice and zest, garlic and thyme to a mixing bowl and whisk together.
Marinate the sliced aubergines in the mixture for 2 hours, turning them every 30 minutes.
Heat a little oil in a frying pan and fry until soft and golden on both sides. Set aside to cool.
Cream cheese filling:
Using a mixing bowl, add the cream cheese, spinach, red pepper, garlic and seasoning and mix until well combined.
Spread onto the prepared aubergine slices and roll up.
To serve:
Arrange the rolls on a platter and serve with a drizzle of olive oil and a sprinkle of spring onions.
