Air Fryer Mozzarella Filled Meatballs

Ingredients:

Meatballs:
1 slice(s) bread
soaked in 60 ml of milk
500 g lean beef mince
60 ml tomato sauce
60 ml chutney or sweet chilli sauce
salt & freshly ground black pepper to taste
150 g LANCEWOOD® Medium Fat Mozzarella, cut into 1 cm x 1 cm cubes
oil for brushing

Basil pesto dipping sauce:
250 ml LANCEWOOD® Double Cream Plain Yoghurt
45 ml basil pesto
salt to taste

Method

Meatballs:
  1. Using a large mixing bowl, mash the bread using a fork.
  2. Add the mince, tomato sauce, chutney and seasoning to taste and mix until well combined.
  3. Shape the mince into small balls. Push a mozzarella cube inside each and shape mince around it.
  4. Brush the meatballs lightly with oil.


Air fryer: Place in a single layer into the basket and fry for 8 minutes at 180°C until golden. Repeat with the remaining batches.

Oven baking: Preheat the oven to 180°C and bake for 25 minutes until golden.

Basil pesto dipping sauce:
  1. Using a small bowl, add the yoghurt, basil pesto and seasoning and mix through.
  2. Serve warm with basil pesto dipping sauce, mayonnaise, sweet chilli and tomato sauce.


HINTS & TIPS: Air fryer cooking times are a guideline as temperatures may vary. Please adapt cooking time accordingly.
