Rainbow Slaw:
1. Grate the carrots and add to a bowl together with the red and green cabbage.
2. In a separate bowl, mix the cottage cheese, mayonnaise, salt, pepper and a squeeze of lemon juice. Pour over the slaw and mix well.
3. Cut the burger buns in half and butter both sides. Air Fry at 190o for 3-4 minutes until golden.
4. Air Fry the chicken schnitzels at 190o for 12-14 minutes, turning halfway.
5. Spread 2 tbsp of cream cheese onto each of the bottom bun halves. Top with some lettuce leaves and a slice of tomato, then the chicken schnitzel. Add some rainbow slaw then place the top bun halves on top.
6. Serve with potato wedges for a delicious lunch!
