Lancewood Smoked Salmon Potato Salad

Ingredients

500 g baby potatoes
250 g LANCEWOOD® Medium Fat Smooth Cheese and Chives Cottage Cheese
250 g hot smoked salmon , flaked
125 ml milk
juice of 1 lemon
zest of 1 lemon
45 ml fresh dill , chopped
125 g sugar snap peas , sliced
2 spring onion(s) , thinly sliced
3 large egg(s) , soft boiled and halved
salt & freshly ground black pepper  to taste
fresh dill , chopped for serving

Method

Cook the potatoes in salted water until soft. Drain and leave to cool slightly.

Cut the potatoes into quarters and place in a bowl.

In a separate bowl, mix the cottage cheese and milk together. Add the lemon juice, lemon zest, dill and seasoning to taste. Add this mixture to the potatoes and toss gently to mix.

Add the salmon, sugar snap peas and spring onions and toss once more. Top with the eggs and sprinkle with dill.
