Lancewood Lemon Cheesecake Parfait

Ingredients

1 brownie , cut into 2 cm cubes
250 ml LANCEWOOD® Double Cream Lemon Cheesecake Flavoured Yoghurt
50 g mini Tennis biscuits , reserve 4 for the top and crush the rest
lemon zest

Method

Use a 6 cm in diameter x 10 cm high Maison or glass jar with a lid of your choice.

Place the brownie in the bottom of the jar and press down firmly.

Layer with half the yoghurt and sprinkle the Tennis biscuits over. Layer with the remaining yoghurt.

Top with the reserved biscuits and the lemon zest curl.

Close the jar and refrigerate until needed.

HINTS & TIPS:

  • Cut a marshmallow chocolate covered Easter egg in half and stick it on top with the cut sides facing outwards to resemble bunny ears.
  • Replace the Tennis biscuits with lemon biscuits.
  • Replace the brownie with a chocolate muffin.
