Ingredients

250 g cherry tomatoes

1 clove garlic, crushed

1 small red onion, thinly sliced

30 ml olive oil

15 ml balsamic vinegar

15 ml chopped parsley

15 ml shredded basil

salt and freshly ground black pepper to taste

1 x 250 g LANCEWOOD® Medium Fat Plain Cream Cheese

30 ml Dijon mustard

8 slices freshly baked bread of your choice

200 g LANCEWOOD® Cheddar, coarsely grated

8 large slices rare roast beef (approx. 250 g)

fresh rocket leaves

Method

Cut the cherry tomatoes in half. Add the garlic, sliced onion, olive oil, balsamic, herbs and seasoning to taste. Leave to stand for 1 hour, stirring every now and again. Mix together the cream cheese and the mustard. Spread cream cheese mixture thickly on all the slices of bread. Top 4 slices with the marinated tomatoes, cheese, rare roast beef and rocket, then top each with the remaining slices of bread.
